Mirgin ages a minimum of 35 months on its lees, building toasty complexity without the heaviness of added sugar—it's Brut Nature (no dosage), bone-dry and tense. The result is pale yellow with green hues, delicate and poised, with white fruit and citrus on entry followed by notes of pastry and green almond from extended aging.
