Billecart-Salmon, Champagne "Le Reserve", NV [non-discountable]
Brut Réserve is the core of the Billecart-Salmon range—the house’s non-vintage Champagne that defines its elegant, understated style. It’s a blend of all three traditional Champagne grapes: Pinot Meunier (40%), Pinot Noir (30%), and Chardonnay (30%), sourced from Premier and Grand Cru sites across the Montagne de Reims, Vallée de la Marne, and Côte des Blancs.
The wine is fermented in stainless steel to preserve freshness and clarity, with partial malolactic fermentation depending on the base year. It includes a healthy proportion of reserve wines (typically 30–40%), which helps maintain house style and adds complexity. The wine is aged for about 30 months on the lees, longer than the minimum required, and finished with a Brut-level dosage (~7–8 g/L).
The result is a finely textured Champagne with flavors of crisp apple, citrus peel, white flowers, and toasted brioche, all carried on a creamy mousse and underpinned by chalky minerality. It’s classic, versatile, and one of the most consistent Brut NVs on the market—perfect for aperitif or light food pairings.
