Yume Utai is Japanese, roughly a song of dreams, which is a poetic name for an entry-level white, and the wine earns it. It's medium-bodied and taut, with white peach, lemon peel, crushed stone and a saline edge running through a long, mineral finish. Serve it cool, not cold, and it will still be improving in the glass an hour later.
