One hundred percent Cabernet Sauvignon aged in large-format Burgundian oak vats—an approach almost unheard of in Pauillac, where small Bordeaux barrels have reigned for centuries. Michel Aroldi’s Château Dompierre operates outside the 1855 Classification but produces wine that challenges the hierarchy. His winemaking philosophy is radically non-interventionist: the wine enters fine-grained Burgundian oak at the start and remains there without racking or pumping until complete. The result is a purer expression of Pauillac’s famed gravel terroir—the same soils that nurture Latour, Lafite, and Mouton Rothschild. The near-perfect 2020 vintage delivered creamy tannins and silky structure with exceptional depth. Approachable now but built to age fifteen years or more.
