Steve McCarthy founded Clear Creek in Portland in 1985 on the conviction that America ought to be making fruit brandy the way the French do — properly, patiently, from real fruit. This one is pot-distilled from Oregon apples and then aged in oak for a full eight years, which is what takes it from bright and orchard-fresh to something rounder, spicier and altogether more contemplative. Apple is still front and center, but it arrives wrapped in vanilla, baking spice and toasted wood. Neat in a snifter after dinner is the obvious move, though it makes a superb Calvados-style cocktail if you're so inclined. A benchmark American fruit brandy.
