The name means gravel, and this single vineyard's gravel-over-limestone soils make it the most Burgundian bottling of the bunch, all citrus and cool, savory tension rather than weight. Like every Chardonnay here it's made ouille, topped up in barrel to stay precise and non-oxidative, farmed biodynamically by Stephane Tissot, whose parcel-by-parcel obsession has made him one of France's most admired vignerons.
