La Mailloche comes from a prized lieu-dit of degraded Lias clay over limestone — terroir that pushes the fruit toward stony precision rather than richness. Vinified in the topped-up (ouillé) style with no oxidative aging, then raised roughly two years in barrel with a modest fraction new. The 2023 carries Tissot's hallmark vibrancy: chiseled, salty, with the long mineral grip Jura limestone delivers when it's farmed this carefully.
