Stéphane Tissot's En Barberon parcel sits on the Côtes du Jura side of his domaine — east-west exposed, fifty-year-old vines on Lias clay and marl with a fine veneer of limestone scree. The site is shared between Chardonnay and Pinot Noir; this is the topped-up (ouillé) white, fermented spontaneously and raised about two years in 228L barrels with a small fraction new and no added sulfur. The clay subsoils give En Barberon a famously smoky, almost gunflint character — creamier and spicier than Tissot's purer limestone cuvées, with a citrus-pith bitterness on the finish that pulls everything taut. A serious, terroir-driven Jura Chardonnay built for the table and for the cellar.
