Elio Grasso's house sits on a ridge in Monforte d'Alba with the vineyards falling away on either side, and Gavarini Chiniera is the parcel just below the door. It's the cooler, more perfumed of the estate's two great crus — where Ginestra brings power, Chiniera brings fragrance and finesse, though nobody would mistake it for shy. Gianluca Grasso ferments simply and ages the wine in large Slavonian casks, the traditional route, which lets Nebbiolo's tar-and-roses aromatics arrive unfiltered by new wood. The 2019 is classically proportioned: firm, structured and still tightly wound, with red cherry, dried rose, sweet tobacco and the fine dusty tannin that makes Barolo Barolo. Open it now with a serious decant and something rich on the plate, or put it away for a decade and be extremely glad you did.
