The bottle that made Giovanni Canonica a cult, now in the format that suits it best. Paiagallo is his home cru, a warm slope just below the village of Barolo, and he works it the way his grandfather's generation would have: long macerations, big old Slavonian casks, minimal sulfur, no fining, no filtration. The result is Nebbiolo at its most transparent -- pale garnet, wildly perfumed, rose petal and sour cherry and tar over a firm but never hard tannic frame. 2021 was a classic Piedmont vintage, cool enough to hold the aromatics and structured enough to demand patience. Magnums age more slowly and more gracefully than standard bottles, which makes this a genuinely long-haul proposition, and a lot of fun to put on a table. Production is minuscule; magnums, more so.
