Francois and Pierre Hure farm organically-leaning, roughly thirty-five-year-old vines and blend all three Champagne grapes here, forty percent Pinot Noir, forty percent Pinot Meunier, and twenty percent Chardonnay, built around a solera-style reserve they call the memory of the winery. This bottling rests on a 2020 base and comes in bone-dry as an Extra-Brut, dosed at just 3.7 grams per liter, so the chalk and the fruit do the talking. Three years on the lees give it depth without weight. It's grower Champagne with generosity built in.
