If you want to taste the whole estate in a single bottle, this is it. Escheburg is a dry Riesling blended from the four top Enkirch crus, drawing mainly on the blue slate of Ellergrub, so it's essentially a cross-section of the house's finest terroirs. The vines run past 60 years old, some of them ungrafted, and Gernot Kollmann farms organically and ferments dry with wild yeast. A brief skin contact and a rest in old barrels give it texture without any oaky noise. It's long been one of the estate's smartest values and best all-arounders.
