Joao Pato (Duckman), Rosa Duck Pet-Nat, NV

Pato means duck in Portuguese, and the Pato family leaned all the way into it with their playful "Duckman" label—of which this pink fizz is the most joyful expression. It's a pet-nat: whole Baga berries co-fermented with Maria Gomes and left to finish their bubbles in the bottle, ancestral-style, with no sulfur added. Baga is Bairrada's brooding, tannic red grape, but bottled young and fizzy it goes bright and juicy, all strawberry and redcurrant. Cloudy, low-fuss, and made to disappear fast. Chill it hard and open it whenever the mood strikes.
