The Saumagen is a limestone amphitheater in Kallstadt, a former Roman quarry planted with vines in 1810 and home to some of the greatest, most long-lived dry Rieslings in all of Germany. Koehler-Ruprecht farms a prime southeast-facing parcel of old vines here, ferments spontaneously, and ages in ancient neutral casks with a patience most modern producers have long abandoned. 'Kabinett Trocken' is the house term for the lighter, more delicate tier off this hallowed site: an utterly elegant, dancing, 'true' dry Kabinett with a spine of limestone running clean through it. The cool 2021 vintage gave it tension and precision; give it a few years and it will only get better.
