
Laurent Cazottes, Goutte de Mauzac Rose Eau de Vie, NV (375ml)
An eau-de-vie made from a grape that nearly disappeared. Mauzac Rose is an old Tarn variety that had almost vanished, and Laurent Cazottes planted a parcel of it in 2001, farmed organically, largely so he could distill it. The grapes are picked ripe and dried on mats to concentrate them before fermentation, then pot-distilled and brought slowly down to strength with demineralized water rather than a hard cut. This is an eau-de-vie de raisin, made from the grape itself rather than the leftover marc, so it comes out delicate instead of rustic: apple skin, quince, dried pear and a floral top note, all bone dry with nothing added. A rare-grape rescue mission in liquid form. Pour it cool in a small glass after dinner, or drop it into a cocktail where a fruit spirit should be doing the talking.
