Louis Boillot launched his domaine in 2002, inheriting four generations of family vineyard acquisitions in Volnay and Gevrey-Chambertin. His father Lucien originally founded the family estate in Gevrey-Chambertin in the 1950s. Les Evocelles sits at the northern edge of the Gevrey-Chambertin appellation, on terraces at the top of the slope with full eastern exposure. The name evolved from "Les Brosselles" (scrubland) when vines were first planted centuries ago. Vines here average over 50 years old, growing in clayey silt soils. Louis employs gentle extraction with short, cool pre-fermentation maceration, aging 15-18 months in oak with maximum 30% new wood. No fining or filtration. The 2023 Burgundy vintage produced expressive, aromatic wines with classical balance. This is quiet excellence from an undervalued corner of a famous village.
