Add water and watch it turn white. Arak is Lebanon's national spirit and its most theatrical: crystal clear in the bottle, it goes milky the instant water hits it, as the aniseed oils drop out of solution. Massaya, based in the Bekaa Valley, makes theirs the traditional way, distilling from grapes, redistilling with green aniseed, then letting the spirit rest in clay jars, which is what turns it from firecracker into something you can actually sit with. The ritual matters: pour the arak, add water at roughly two parts to one, and only then the ice, never the other way around. This is a spirit built for a table crowded with mezze, not for brooding over alone. Once you get the rhythm, ordering a beer with your hummus starts to feel like a missed opportunity.
