From a hilltop vineyard in Montigny-les-Arsures, this Chardonnay grows on marne rouge soils richer in iron than typical marl, giving deeper minerality and saline character. Michel Gahier produces Les Crets in the ouillé style (barrels topped-up during aging) with no sulfites added, aging two years in neutral oak. Though topped-up, the wine displays layered complexity and an endlessly ringing finish more commonly associated with sous voile (yeast-veil) aging. A mineral-driven expression of Jura Chardonnay.
