Serralunga has a reputation for muscle, and Parafada is where it also remembers to be pretty. Palladino returned to this village in 1974, buying the old 18th-century Cappellano cellar and then prying loose parcel after parcel from locals wary of outsiders; the next generation runs it now, and they have not been tempted to modernize. Long fermentations, large old Slavonian botti, and Nebbiolo left to be Nebbiolo. The 2016 is beginning to open, offering rose and dried red fruit with the tar and iron underpinning that only Serralunga delivers, and the tannins still have plenty to say. We had to hunt these bottles down in Italy, which is what mature traditional Barolo now requires. Decant generously, or cellar without worry.
