Pascal started working with his parents in 1982 and managed the family estate Doquet-Jeanmaire from 1995-2003 before founding his own domaine in 2004. He farms just under 9 hectares, with more than 5 hectares in Grand Cru sites including Le Mesnil-sur-Oger. Certified organic since 2010, Doquet stopped chemical treatments in 2000. Diapason is 100% Chardonnay from Le Mesnil-sur-Oger Grand Cru, blended from multiple vintages with reserve perpétuelle, fermented with indigenous yeasts, and aged minimum 3 years before disgorgement.
