Legendary single-vineyard Sancerre from the steep Kimmeridgian slopes of Monts Damnés—considered Sancerre's greatest site. Florence Thomas and Jean-Paul Labaille took over her father Claude's vines in 1994. Jean-Paul, who quit his civil service job to become a full-time vigneron, selects the best lots for this cuvée, first bottled in 1997 as a tribute to importer Joe Dressner's dog Buster. Native yeast fermentation, aged 8-9 months in 600-liter foudres, bottled unfiltered and unfined. Extremely limited production.
