Baia's Wine, Tsolikouri, 2024

One of the breakout stars of new-wave Georgian wine, and a great place to meet Tsolikouri — the most-planted white of the verdant Imereti region in western Georgia. Baia Abuladze launched Baia's Wine in 2015 with her younger siblings Gvantsa and Giorgi in the village of Obcha, where their family has grown vines for generations. The trio farms organically and works in a lighter, fresher style than the deep-amber qvevri wines of eastern Kakheti — this Tsolikouri sees skin contact only briefly, finishing closer to a bright, dry white than a full orange wine. The 2024 is a textured, food-friendly white with the saline twang and pithy bite that makes Imereti so distinctive. Pour it for anyone who thinks Georgia means only big amber wines.
