The Bzikot story begins with Sylvain's grandfather, who arrived in Burgundy from Poland before World War II and built an estate in the postwar years. For decades the family sold grapes to négociants, but Sylvain began bottling under his own name in the 1990s, and in 2012 established his own project dedicated to terroir-faithful wines from the Côte de Beaune. Working fifteen hectares across Meursault, Puligny-Montrachet, Auxey-Duresses, Volnay, and Santenay, Bzikot ferments and ages in small French oak barrels for twelve months with twenty percent new wood.
