Sweet Bordeaux in a perfect half-bottle format. Chateau Manos sits in Haux, managed by the Neel-Chombart family (owners of neighboring Chateau Lamothe de Haux) since 1991. Cadillac is the appellation across the Garonne from Sauternes, where morning fog from the river creates ideal conditions for botrytis. This is 98% Semillon, 70-80% botrytis-affected, hand-harvested in multiple passes. Golden, honeyed, with tropical fruit and orange marmalade balanced by fresh acidity. Aged in the estate's 17th-century limestone cellars. A dessert wine for Tuesday night.
