Mathieu Vallée is best known for some of Saumur's most coveted Cabernet Franc and Chenin Blanc, but he has a soft spot for Pineau d'Aunis, the peppery, glouglou-style red grape that AOC rules won't let into a Saumur bottle. So this one goes out as IGP Val de Loire, with all of Vallée's biodynamic care: hand-harvested fruit, ten days of carbonic maceration in concrete, then a soft rest in large old foudres. The result is everything we love about d'Aunis turned up a notch: bright, peppery, almost weightless on the palate, with crunchy red fruit and a wild, leafy lift. A serious vigneron taking a rare grape seriously, then asking you to drink it slightly chilled with whatever's in the fridge.
