Saumur's hidden jewel turns the volume up. Mathieu Vallee took over Chateau Yvonne in 2007 and has farmed biodynamically since 2012; La Folie is his signature Saumur-Champigny, a 100% Cabernet Franc drawn from a cluster of plots in the village of Champigny itself, including the lieu-dit that gives the wine its name. Vines range from 15 to 50 years old, rooted in clay-limestone over the local 'Pierre de Champigny' limestone. Native-yeast fermentation in concrete, then a year split between large foudre and seasoned barrique. The result is radiant Loire Cab Franc: floral, graphite-dusted, and built on tuffeau bones. Bottled unfined and unfiltered.
