The village-level Predappio cuvee draws from three parcels of clay-limestone and spungone, the porous shell-rich sandstone that defines the area. Made from 100% Sangiovese, fermented spontaneously and aged in large neutral Slavonian botti, this is a serious, restrained wine that delivers cherry fruit, herbs, and chalky minerality.
