The Chotard family has been making wine in Crézancy-en-Sancerre for more than 200 years; today Daniel and his son Simon farm around sixteen hectares in the heart of the appellation, working organically and parcel by parcel. This is their classic Sancerre Blanc — the village blend, drawn from across their holdings on Kimmeridgian limestone and flint. The grapes are destemmed, cold-soaked, and fermented in stainless steel and large neutral wood, a low-intervention approach that lets the chalky terroir do the talking.
