Oxidative Jura Chardonnay aged under flor. Founded 1920 by Victor Gros; Nicole Deriaux has made the wines since 1986. 9 hectares in L'Étoile—named for the fossilized limestone sea stars found in the soil. 100% Chardonnay fermented spontaneously in 230-liter neutral oak barrels, then aged 4-5 years with no topping off. The wine concentrates under a flor-like yeast veil, developing honey, beeswax, and mineral notes. Organic farming in conversion but not yet certified.
