The En Vallerot lieu-dit sits in the cool hills above Ladoix-Serrigny in the Hautes-Côtes de Beaune — higher elevation, slower ripening, brighter acidity than the Côte itself. Hand-harvested, gently pressed, raised in barrel with a modest portion of new wood.
