Dominique Hauvette is one of Provence's quiet revolutionaries. Working biodynamically from her tiny estate at the north edge of the Alpilles foothills near Saint-Rémy, she has earned cult status (and France's winemaker-of-the-year nod from Revue des Vins de France) by simply trusting her clay-limestone terroir. "Petra" — Latin for "rock" — is her serious-minded rosé, a blend of Cinsault, Syrah, and Grenache from vines aged 15 to 20 years, vinified in concrete eggs and aged nearly a year on its lees. The result is rosé built for the table: textured, slightly mineral, savory, with the gravitas that comes from old vines, low yields, and zero shortcuts. A rosé that drinks like a white Burgundy.
