Mature Chablis from one of the appellation's most important domaines, drinking beautifully right now. Domaine William Fèvre owns one of the largest and most coveted holdings in Chablis — including Grand Cru parcels that put it in elite company — and has been steered since 1998 by Didier Séguier, who has slowly moved the estate to organic certification (achieved in 2023). Les Vaillons is one of Chablis's most consistent 1er Crus, a south-facing Kimmeridgian limestone slope on the left bank of the Serein opposite the Grand Crus, with vines averaging around fifty years. 2017 was an excellent, classically balanced Chablis vintage — and eight years in, this is in its prime drinking window: flinty, mineral, layered, still energetic, with a couple more years of upside.
