Eduardo Torres Acosta is a young winemaker from Tenerife who moved to Sicily in 2012, drawn by parallels between Etna and his native Canary Islands—both volcanic terroirs. After working at Arianna Occhipinti and Passopisciaro, he vinified his first vintage in 2014, eventually converting a small Etna garage into his winery in 2018. "Versante Est" refers to the eastern slope of Mount Etna, from three parcels averaging 80 years old at 750-900 meters on sandy volcanic ash. Predominantly Carricante with small amounts of local varieties, hand-harvested and spontaneously fermented in concrete without temperature control. Two-day skin maceration, aged in concrete and old oak. Creamy and saline with clean volcanic minerality. Ideal with seafood.
