Enric Soler, a former Spanish Sommelier Champion turned full-time vigneron in 2004, farms his old-vine Xarel-lo plots in Penedes biodynamically, ferments wild and works hands-off. The Improvisacio (around 6,000 bottles) is fermented and aged in a combination of Austrian Stockinger barrels and concrete eggs — a deliberate move away from new oak that lets Xarel-lo's chiseled, herb-flecked, saline personality come through unfiltered. Apple, fennel, white flowers and crushed stone, all carried by a deeply textural mid-palate. This is what serious Mediterranean white wine looks like.
