Nun Vinya dels Taus is Enric Soler's flagship — the wine that changed the conversation around Xarel-lo and arguably around still white wine in Penedes full stop. The grapes come from a 0.7-hectare parcel of bush vines his grandfather planted in 1945; Soler, a former Spanish Sommelier Champion, took it over in 2004 and farms it biodynamically. The name means "vineyard of molehills." Just over 2,000 bottles a year. Vinified with quiet ambition — wild ferment, eight months in 300-liter Burgundy barrels (25% new), no batonnage "so as not to make the wine dizzy," Enric says — bottled unfiltered at a graceful 12.5%. The result is one of Spain's most celebrated whites: layered, mineral, ageworthy, and unmistakably Catalan. A landmark wine.
