Flying Cloud is the second label of veteran San Luis Obispo winemaker Stephen Ross Dooley, launched in 2003 with his wife Paula to offer approachable, food-friendly bottles from California's Central Coast. Stephen cut his Cabernet teeth in the early 1980s at Louis M. Martini in Napa, and the Flying Cloud Paso bottling channels that classic schooling: hand-sorted, de-stemmed fruit, gentle daily pump-overs over a four-week ferment, basket-pressed, and aged 17 months in neutral French oak so the variety and place speak first. It's certified organic, supple, and built to drink rather than to be cellared - a hearty, mouth-filling Paso Cab at a price that rewards opening a second bottle.
