Francois Chidaine is one of the Loire Valley's most celebrated winemakers, renowned for extraordinary Chenin Blanc from Montlouis and Vouvray. He took over his family's modest 4-hectare holding in 1989 and has expanded to some 40 hectares. Farming has been organic since 1992 and biodynamic since 1999, though he refuses to advertise certifications on labels—the work speaks for itself. This Touraine Rouge comes from estate vines on clay-limestone soils near the Cher river, blending equal parts Cot (Malbec), Cabernet Franc, and Pinot d'Aunis. Wild yeast fermentation in barrels and demi-muids, aged 12 months on lees. Medium-bodied with dark fruit, mineral undertones, and the peppery spice of Pinot d'Aunis. Versatile with food.
