Herve Villemade took over his family's vines in Cellettes in 1995, converted to organic farming in 2000, and now works the soils of Cheverny and Cour-Cheverny biodynamically. Cheverny Blanc is a blend led by Sauvignon Blanc with a splash of Chardonnay and the local Menu Pineau, direct-pressed and fermented in old oak and demi-muids for texture rather than oakiness. It's the kind of honest, low-intervention bottle that makes a Tuesday night feel a little more interesting.
