Joao Pato (Duckman), "White Duck", NV

100% Bical, fermented and aged in stainless steel. This is a decidedly different expression of Bical from Vinha Formal, one of Luis Pato's flagship aged whites. It's bright and waxy, with flavors of white fruit (pear, lychee), citrus zest, white flowers and crushed stones. Bical's aromatics are restrained and sleek, lending just a hint of florality reminiscent of white peaches. A gentle 11% abv, though fully dry. This would be an excellent pairing for white meats, cheese, or anything fried.
