Crinquand launched his Arbois estate in 2019 from family vineyards in Les Arsures, farms organically, and works with native yeasts and almost no SO2. This bottling is 100% Savagnin aged sous voile — under the veil of yeast, without topping up the barrels — for an extended stretch, which is the classical Jura move that gives Savagnin its nutty, briny, oxidative character. Four years on, the 2021 is hitting its stride: walnut, curry leaf, dried apple, and that unmistakable salty grip. Drink now or hold a few more years.
