Julien Sunier learned his craft in Burgundy alongside Christophe Roumier, one of the Cote de Nuits' great names—and it shows in how he treats Gamay. This is Regnie, the youngest of the ten Beaujolais crus, from old vines on sandy granite, fermented whole-cluster with native yeasts and raised in old wood so nothing gets in the way of the fruit. The result is Beaujolais made like fine Burgundy: pale, perfumed, and lifted, all crunchy red berries and floral snap. Give it a couple minutes in the glass to unfurl. Cool it slightly and it disappears alarmingly fast.
