Klein Constantia's late-harvest Muscat Blanc Petits Grains undergoes an artisanal production: 10% picked early for acidity, the remainder sun-ripened to concentrate sugars. The wine is fermented on gross lees in barrels for 18 months in Hungarian and French oak, then racked into foudres for an additional 18 months.
