The fruit comes from roughly 40-year-old vines on a chalky limestone ridge, fermented with native yeasts and aged 18 months in barrel, a good portion new, with no fining or filtration. That gives a powerful, mineral-driven Chenin with real depth and texture, the kind of serious dry white the Saumur appellation does so well. Production is tiny.
