A serious biodynamic take on Piedmont's other great white grape. Cascina La Raia is a biodynamic estate in the Gavi DOCG of southeastern Piedmont, founded in 2002 by the Rossi Cairo family on principles drawn from Rudolf Steiner. Pleo is their entry-tier Gavi — though entry-tier here means a wine grown from southwest-facing Cortese vines at around 400 meters elevation on the estate's gently rolling hills, fermented with indigenous yeast, and aged for three months on its fine lees in stainless steel with regular bâtonnage. The result is a Cortese that punches well above the appellation's reputation: clean, mineral, herb-flecked, with a distinctive saline edge that comes from those well-exposed slopes. Drink chilled with anything from the sea — or anything from the Italian table.
