From the rising Savigny-les-Beaune address Le Puy de l'Ours, a tightly focused Chardonnay from a tiny one-third hectare parcel called Les Goudelettes. Jean Orsoni and Juliette Puyperoux founded the domaine in 2020 on family vineyards, farming organically and working as non-interventionists. Les Goudelettes sits on clay-limestone soils with white marl. The grapes are whole-cluster pressed, cold-settled briefly, and fermented with native yeasts. Aging happens in stainless steel and neutral vessels, preserving the wine's clean lines and mineral cut.
