Roederer is Champagne's top traditionalist, founded in 1776 and now the region's largest organic landholder, with chef de cave Jean-Baptiste Lecaillon driving the move to organic and biodynamic farming back in the late 1990s. This vintage Blanc de Blancs is 100% Chardonnay from the heart of the Cote des Blancs, drawn largely from the Grand Cru village of Avize. A portion sees oak, and the wine ages around five years in the cellar before release. The cool-then-warm 2019 vintage delivers concentration with real cut. Serve well chilled; it will reward a few years in the cellar too.
