Tom Lubbe arrived in Roussillon for a Domaine Gauby internship and never left, founding Matassa in 2003 and helping turn this rugged corner of southern France into one of Europe's most quietly radical zones for terroir-driven, low-intervention wine. Coume de l'Olla is the gateway: named for a lieu-dit in his patchwork of mountain vineyards above the Mediterranean, it's the delicate, high-toned introduction to the estate's world. Built on traditional Catalan white varieties farmed organically and biodynamically, it sees short skin contact, neutral barrels, and minimal sulfur. The result is fresh, energetic, and full of life.
