Tom Lubbe arrived in Roussillon for a stint at Domaine Gauby and never went home, founding Matassa in 2003 and helping transform this old, overlooked region into a hotbed of terroir-focused natural wine. Coume de l'Olla is the gateway red: named for a lieu-dit in Tom's mountain vineyards, it's the delicate, juicy introduction to the estate, built on traditional Catalan varieties farmed organically and biodynamically. Short maceration, neutral barrels, and minimal sulfur keep it light on its feet and bursting with energy. This is Matassa at its most immediate and refreshing. Pre-arrival.
