Violets and floral with a touch of spice. Light body, high acid with grainy, yet present tannins for some structure. 'Mondeuse'-ish but unique.
Vaccarese is an endangered Chateauneuf-du-Pape variety, with only 10 acres left there. Cuttings were brought over from Beaucastel a little while back. These are planted at 1,300 feet elevation, on heavily calcareous soils, organic and dry farmed.
50% whole cluster, on the skins for 10 days with native yeast fermentation before being basked pressed into neutral oak for 6 months.
