Pax Mahle launched his original label in 2000; after a legal battle the brand was dissolved in 2008, and he relaunched Pax Wine Cellars in 2013 to chase the cool-climate, hillside Syrah that drew him in the first place. The Cuvee Syrah is 100% Sonoma County, drawn from multiple hillside blocks shaped by the coastal wind gaps that keep these sites lean and bright. All fruit is foot-trodden and hand-crushed, fermented on native yeasts, and finished in the cellar with minimal intervention so the vineyards do the talking. The 2025 is a fresh, peppery, Northern Rhone-inspired Syrah with the kind of cracked-pepper-and-violet lift that has made Pax a benchmark for California's cool-climate Syrah movement.
